Quarantine and isolation have completely reset our habits and even the shopping cart has been affected; in the first weeks of lockdown people made mega stocks of pasta, rice, canned products and preserves and then gave way to "tradition", with the purchase of yeast and flour to make homemade bread, cakes and pizza.
Today we see together 5 recipes originals to make the homemade pizza, but in a light version!

SUPER PROTEIC PIZZA
This just could not miss; we are or we are not a people of fitness addict?
Ingredients for 2 small pizzas:
85 gr oat flakes
25 gr protein in polvere (gusto neutro)
1 egg
140 g egg white
Salt and pepper
Tomato puree
Rosemary
Mozzarella light oppure fiocchi di milk e/o bresaola.
Preparation
Mix the oat flakes, the proteins, the egg, the egg white, salt and the chopped rosemary. Pour the mixture into a pan (2 portions to be cooked one at a time) and cook 2 minutes per side with lid.
Put your bases on the pan, stuffed with tomato sauce, salt, pepper and a drop of oil and bake at 220 degrees for a few minutes.
Take out your pizzas, add the mozzarella and put back in the oven for 2 minutes (if you opt for oat flakes and bresaola do not make the second passage in the oven). This pizza contains approx 400 calories, compared to the 900 of the classic daisy!
CAULIFLOWER PIZZA
Ingredients for 2 pizzas:
700 gr cauliflower
1 egg
50 gr grated cheese
Tomato puree
Light mozzarella
salt and pepper.
Preparation
Chop the cauliflower in the mixer, add the egg, cheese, salt and pepper and spread the mixture on the pan forming two round bases. Add a little oil and put in the oven at 180 degrees for 10 minutes.
Take out, add the tomato puree, light mozzarella and bake for another 10 minutes. For an even lighter version you can replace the egg with 2 egg whites.
POTATO AND TUNA PIZZA
Ingredients for a pan of 30:
500 gr potatoes
1 albumen
80 gr corn or rice flour
Tomato puree
Salt and pepper
Light mozzarella
Tuna
Preparation
Boil the potatoes, mash them and, once lukewarm, add the egg white, flour, salt and pepper. Knead with your hands until a smooth ball is obtained.
Roll out the dough on the baking sheet and cook at 180 degrees for 10/15 minutes. Take out the pan, add the tomato puree, tuna and mozzarella and cook for another 10 minutes.
COUS COUS PIZZA WITH OLIVES
Ingredients for 2 pizzas:
200 gr couscous
200 ml of water
1 tablespoon of oil
2 tablespoons of cottage cheese
2 whites
Tomato puree
Light mozzarella
Pitted olives
Salt and oregano
Preparation
Cook the couscous in 200 ml of water and let it cool; add the cottage cheese, egg whites, oil, salt, pepper until you have a homogeneous mixture.
Pour the mixture on the pan giving the shape you prefer and put the tomato puree and olives on top. Bake at 180 degrees for 30 minutes. Take out, add the mozzarella and bake another 5/10 minutes.
REAL PIZZA
I deceived you I know, this is not light at all, but I couldn't help sharing the pizza recipe with you, which I can't wait to make every Saturday night!
Ingredients for 2 pizzas
200 gr type 0 flour or manitoba
130 gr type 00 soft flour
220 gr water
2 gr of fresh brewer's yeast
Tomato puree
1 teaspoon salt
1 tablespoon and a half of oil,,
Mozzarella di bufala
Basil
Preparation
Dissolve the yeast in warm water; sift the flours into the bowl and add the water, starting to knead; also add the oil and knead until you have a smooth ball; only now add the salt.
Put the dough in a greased bowl and covered with cling film in the fridge for 24 hours. The next day take out the dough and leave it at room temperature for 4 hours. Take the dough, make 2 loaves and put them to rise for another 2 hours wrapped in a damp cloth.
Roll out the rolls in the oiled pan, put the tomato sauce and bake at 250 degrees for 20 minutes, until the edges are golden brown. Remove from the oven and add the buffalo mozzarella and basil raw.
Of course you can season your pizzas as you like, give free rein to your imagination!
